Vegan Ginger Cookies

These cookies are the BEST ginger cookies I’ve ever baked– vegan or not! They are soft and chewy, and have always been a hit when I bake them for friends and family. Enjoy! :)

Ingredients:

4 Tablespoons sugar
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 1/2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 cup vegetable oil
1/4 cup molasses
1/4 cup soy milk (vanilla or plain)
1 cup sugar
1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees.

Lightly grease cookie sheet. Place the 4 tablespoons of sugar in a small bowl. Sift together the flour, soda, salt and spices. In a separate bowl, combine oil, molasses, soy milk, remaining 1 cup sugar and vanilla. Pour dry mix into wet and mix well.

Roll into 1″ balls and flatten into 1 1/2″ discs. Press tops into bowl of sugar and place 1″ apart, sugar side up on the cookie sheet. Bake 6-8 minutes. Let cool on your cookie sheet for 5 minutes, to firm up, before transferring to cooling rack.
