Happy hump day everyone!
I’m actually pretty surprised it’s already Wednesday!! Yesterday kinda flew by with all the fire drills in my apartment complex– I ended up being stranded outside for a total of TWO full hours yesterday (with Yasha)!! Geez…
This Wednesday morning is off to a WAY better start:
Vanilla Oat Bran!! I used 1/3 cup oat bran, 1 cup water, splash of vanilla, cinnamon, nutmeg, sea salt and liquid stevia, then topped with one tablespoon almond butter and a too-generous splash of pure maple syrup! (I actually had to pour a little of this off into the sink! I don’t like it too sweet! Ick.)
This is also helping my morning:
Coffee made from my OLD coffee pot! (always paired with a glass of water to keep hydrated and prevent teeth staining) It tastes SO good!!!! I ran out of filters for my NEW coffee pot– too many brewing trials!! So I’ll be getting some more at the store today. My old coffee pot only makes 4 cups of coffee (basically 2 “normal-sized” cups) and since we’re hosting Thanksgiving this weekend, I really want to be able to use my NEW 12-cup machine!! I’m determined to master this.
You know what I’ve noticed lately?
Many of my meals have been naturally VEGAN this week! I’ve been feasting on Tofurkey roast, Quinoa & Bean Stuffed Peppers, Butternut fries, daily oat bran, and Green Smoothies!! Kinda makes eating vegan sound easy, right?
Well then, maybe you should check out Vegan Week!
Tomorrow, Thursday Nov. 19th, is the official “Vegan for a Day” challenge.
On Thursday, November 19, we are asking that you devote one or all of your meals to being vegan. We just kindly ask if you could link back to either my blog or Michelle’s when you make your posts about Vegan Week. We will be compiling a list of all who participate throughout the day, on our blogs under the ‘VeganWeek’ tabs. If you could make sure to either send us the link and/or leave it in the comment section of the ‘Vegan 4-A- Day’ official post on Thursday then we can give you proper accolades. If you know of any other friends, bloggers or not, who are up for the challenge…spread it around! Everyone who takes part will have a chance at a really cool prize — details of that to come soon!
So whether it’s one meal, or a whole day of eating vegan meals, you should try it out! Following a vegan diet is incredibly easy, once you have the know-how. In honor of vegan week, I’ll be posting a few of my favorite vegan recipes during the rest of the week! Let me know if you try any of them out!
