Vegan Banana Bread!

It’s been a gluten-free, vegan baking extravaganza at my house lately! I just can’t get enough of my Babycakes cookbook. :D

Yesterday, I knew I wanted to take some vegan goodies to my pregnant sister-in-law, and I happened to have some ripe bananas around the house– so I decided to try making a batch of the Banana Bread!

The recipe was very similar to the Pumpkin Spice loaf I made last week, so I felt pretty confident this time around. The batter came together nicely, but when it came time to mash the bananas, I realized they weren’t as ripe as I had thought they were! Fortunately, I remembered Katie’s melted banana trick: I mashed the bananas, then melted them in the microwave! The heat totally brought out the sweet flavor of the bananas, and they tasted just as good as if they were ripe!

Since the recipe makes a little more than a loaf’s worth, I used the leftover batter to make two muffins– with a special “kick” added in!

I ate one muffin (for quality control, of course) :)   and packed up the other one for my sister-in-law. It tasted awesome! Perfectly moist, not too-sweet, and just the right texture. YUM.

The loaf turned out well, too!

In fact, there’s only a little bit left! I gave a few slices to my sister-in-law, and my husband and I enjoyed an after-dinner slice (two for him!) with some coffee. It’s SO good!

What I especially love about this bread, is that it’s practically guilt-free! Being vegan, it uses coconut oil instead of butter, which is proven to boost your metabolism! It’s also gluten-free, so it’s easier on the digestive system, and free of refined sugars! Now that’s sweet! (and yes, I’m totally cheesy) ;)

    Good afternoon… I have been looking over your site about 4 days now. Your site is addictive to me. I find one thing that catches my eye and then another. I have been looking for your recipe for “Vegan Banana Bread” I would love to do it the mega healthy way… no butter= coconut & gluten free. Is there any way possible you could share this mouth watering loaf with me? I am going to try the detox lasagna next weekend! EXCITED!!!
