All about the dressing

Hey there, bloggy friends! Happy hump day! ;)

I’m exhausted today! I feel like I’ve been half-asleep all day, just going through the motions…

And I blame her:

Don’t let that innocent face fool you. She woke me up at 2:30 am this morning! I woke up to her sitting on my chest, looking down and me and whimpering! What the heck?! I was afraid she needed to go outside for some reason, but some belly rubs seemed to satisfy her until 6 am, when I woke up to work. I’ve been a bit zombie-ish ever since. ;)

Fortunately, I got a little boost from my morning juice:

Beet greens, Romaine, Kale, 1/2 an apple, a small lemon, and 3 carrots went into this beauty:

Very tasty! A nice balance of sweet and tangy. :D

I felt a little snack-ish before lunch, so I had the other half of my Strawberry/Romaine raw soup from yesterday.

Then made a new-to-me salad dressing:

House Vinaigrette
makes 8 servings
1/3 cup + 1 T. olive oil
1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried basil
3/4 tsp. pepper
3/4 tsp. sea salt
3/4 tsp. onion powder
3/4 tsp. Dijon-style mustard
1/2 cup + 2 tsp. red wine vinegar

Combine all ingredients, then blend until smooth!

This is the best vinaigrette I’ve made in a LONG time! It’s for sure my new favorite! The key to making a good salad, is a good dressing, so this made a GOOD SALAD:

It’s all about the dressing folks! I was almost saladed-out there for a while, but this dressing is a game-changer! This salad was a nice mix of sweet and savory: mixed greens, roasted beets, crunchy red bell peppers, and shredded raw goat cheddar. I loved every bite. :D

I had a couple pieces of raw goat cheddar for “dessert” too:

Best. Cheese. Ever. Hands down. ;) (and way less acidic than cow’s dairy!)

After lunch, I went on a run outside with my friend Heidi, in some cool, about-to-rain weather. I love the rain!! It started to drizzle a bit on my way home, and I almost wanted to keep running! Almost. My feet told me no, so I stopped. I’m working on listening to my body!

I’ve got another “Bad Movie Wednesday” ahead of me tonight– our friend Brad has picked out a Sci Fi “original movie” for tonight! Boy, oh boy, I can’t wait…
