Raw Hummus

Hi friends!

Today’s been “one of those days” for me– I’m stressed out about a certain situation that’s been getting awfully sticky lately, and it’s making me sick to my stomach! So rather than waste this post venting to you guys, I thought I’d share one of my all-time favorite recipes instead. :D

Raw Hummus

1 large zuchinni, peeled and chopped
1/2 cup raw tahini
1/4 cup fresh lemon juice
2 tsp. minced garlic (2-4 fresh cloves)
1 tsp. sea salt
2 tsp. cumin

Simply throw all of the ingredients into a mini food chopper, and blend until smooth and creamy! Serve with your favorite crudités! (my favorites are baby carrots and fresh broccoli!)

This hummus is just as tasty as the traditional version, but by omitting the garbanzo beans, this version is easier on your digestive system! Feel free to play with the amounts of tahini and zucchini, to get the texture you desire.
