Hi everyone! TGIF! It’s my mom’s last day in town.
To make it extra-special, I decided to make her one of her FAVORITE morning treats– fresh scones! I wanted to make her a healthy version, though, so I turned to my Babycakes cookbook:
I used the recipe for vegan, refined-sugar free Raspberry Scones, but decided to go with blueberries instead because I think they taste better! I actually used frozen blueberries, and just let them thaw on the counter a couple hours before preparing the batter:
These were so naturally sweet and juicy!
I also used whole wheat flour, instead of the spelt flour that the recipe called for (because Ralph’s decided not to carry spelt flour… grr)
And my favorite vanilla: (which I think makes a big difference!)
This was my first time making scones, and I was so surprised at how QUICK and EASY these were to make! They were mixed and ready to go in the oven in just 10 minutes!
And of course, my FAVORITE part of vegan baking is that you can taste the batter guilt-free! No worrying about raw egg in this batter.
Mmmm…. the batter was so tasty, I knew these were going to be AWESOME!!

I drizzled a bit of agave nectar on top of each scone immediately after pulling them from the oven. It gives them such a nice, sweet crust!
My mom and I each enjoyed a scone fresh from the oven for breakfast this morning:
These were SO GOOD! The taste and texture were spot on, and I didn’t even feel the need to top them with butter! They were perfect as is. Especially the bites with big blueberry chunks:
YUM.
I think these totally satisfied my mom’s “scone tooth!” Ha ha. We’re spending our last day together shopping, cleaning, and watching Jamie Oliver’s Food Revolution tonight! I love what he is trying to do, and I hope, for all of our sakes, that he really does start a revolution!
