Thanks so much for the muscle cramping tips you guys gave me! I think I’ll be increasing my calcium and potassium intake this weekend to see if it helps! I’ve also decided to push my long run back to Sunday–> giving me an extra day to heal!
I’m also looking forward to EATING during the weekend! I know this cleanse will only be effective if I STICK TO IT for a while, so I think what’s going to work for me is taking it easier on the weekends. I’ll still make my juice in the morning, but I’m looking forward to actually EATING lunch!! I think having this type of flexibility is more realistic, and gives me something to look forward to each weekend! Otherwise, I’d probably cave and eat something way worse when I see my husband indulge in all of his yummy weekend splurges!
Speaking of splurges, here’s one of mine for the weekend:
Macaroons!!!!
I’m visiting my sister-in-law this afternoon, and wanted to bring her a “treat” since I know she’s busy with her new baby! She’s just gotten the “green light” to start working out, so I didn’t want to bring something that would spoil her weight-loss efforts, but these macaroons are RAW and GUILT-FREE! And, in my opinion, are JUST as satisfying as a traditional cookie! I’d love to share the recipe with you all, but it’s not my own– you can pick up a copy of Matthew Kenney’s Everyday Raw, and own it yourself, though!
I’m still experimenting with the “oven method” for dehydrating, but my patience is lacking in that department. These macaroons are supposed to dehydrate for TWO FULL DAYS! Um, that’s just not going to happen…
What I’ve been doing, is setting my oven at the LOWEST temperature it will go (170 degrees), then turning it off once it’s preheated. I placed the macaroons in the warm oven, and leave them for about 3 hours– turning the oven on and off about once an hour, to keep it warm. Once they have a nice crust formed on the outside, I’m done! I know they would have a totally different texture if I dehydrated these for two days, but I’m actually really satisfied with the crusty outside, and moist inside!
The only thing this really affects is storage– since my macaroons are NOT fully dehydrated, I don’t expect them to last long at room temperature! But luckily for me, I really enjoy eating frozen cookies. Seriously! That’s actually the way my husband and I prefer traditional cookies, too! We love FROZEN cookies!! So, I have no problem storing my macaroons in the freezer and enjoying them at my leisure. And I certainly DO enjoy them!!
And, of course, the best part of making RAW and VEGAN treats, is licking the bowl!
It’s really amazing how BUTTERY this batter tastes!
So, that might have been a little “cheat” with my juicing regimen today… but it’s practically the weekend, right?
And I didn’t forget about my vegetable juice this morning:
Romaine, lots of kale (for extra calcium!), 1/4 Fuji apple, 2 big carrots, 1/2 lemon. This juice was celery-free and tasted ahh-mazing! Makes me never want to put celery in my juice again… but I will.
Alright, I’ve got a play date with my sister-in-law and baby niece to get to!

mmmm I gotta get back to juicing….I have gone the past 2 weeks without it!
