Is it still the weekend?

Hi friends! Happy Cinco de Mayo! Anybody have fun plans to celebrate?? It’s our friend’s birthday today, so we’re waiting on him to decide how he wants to celebrate!

This week has been a little sporadic so far, and I’m not sure it’s going to get any better until we’re DONE moving! I feel like it’s still the weekend, because we’ve been eating out WAY MORE than normal:

We had Taco Bell for dinner on Monday night–*hiding my face in shame*– we rarely eat at Taco Bell, but in a pinch, their crunchy tacos are pretty tasty. We get them with refried beans and lettuce ONLY. (their beans are vegetarian!) And lots and lots of hot sauce for me!! :D

Yesterday afternoon, my husband surprised me by coming home for lunch! We ended up going out to our favorite local pizza place:

I had a side salad and a slice of spinach pizza. The “old me” would have had TWO slices of pizza and NO salad– so at least I’m making progress!

I haven’t been feeling like juice for breakfast lately, so I opted for Gina’s Protein Pancakes yesterday:

The batter came together nicely, and cooked up just like a traditional pancake:

But when it came time to taste it, I realized my HUGE mistake: I used plain Sun Warrior protein powder instead of the vanilla powder the recipe calls for! Oh my gosh, my pancake tasted TERRIBLE!! I totally forgot to compensate for the sweetness that the vanilla protein powder would have added to the batter… instead, my pancake was bitter and cardboard-like!

Second time’s a charm, though!

I added stevia and some extra vanilla to the batter the second time around, and these were WAAAAY better! I’ll probably stick to my juice most days, but these were a really nice change for breakfast!

After all my starchy, bread-based meals lately (can we say hormones??), my body was begging for veggies! So dinner last night was just that:

A pan FULL of roasted veggies! Yes, I can easily polish off an entire pan full of roasted veggies without thinking twice about it!

This batch included broccoli, cauliflower, and a small sweet potato, tossed in coconut oil, garlic, onion powder and paprika. Once they’re done roasting, I top it all off with some sea salt, and toss them in the pan to evenly coat. I’ve heard that salting your food before it’s cooked is a waste, because the flavor gets cooked away in the process– so now I always save salting my food until it’s done cooking, right before I serve it. I LOVE salt, so I want to make sure I get the full flavor when I use it!!

Did anyone else enjoy LOST last night? Holy moly, I can’t believe that the whole series is almost over! I’m excited to see how it ends, but sad at the same time. :(

I’ve got a busy day ahead of me, starting with cleaning my NEW apartment! I always feel like I have to give the new place a good scrub-down, before moving all my furniture in. I want a nice and clean start! I think I’ll bring Yasha over with me, so she can start getting familiar with her new home– she has SERIOUS anxiety when we move, so I want to do everything I can to make her comfortable with it! Poor girl, I wish I could explain things to her!

We’ve also got some company this weekend– my mother-in-law is coming to visit! She gets here tomorrow, and will be staying through Sunday for Mother’s Day, so that’s going to keep us really busy! I feel bad that we have to move the same weekend she’s here, but hopefully it will all go smoothly and quickly so we can get back to spending time with her! Luckily, I think she’ll be distracted by her NEW granddaughter, and won’t miss us too much while we’re moving. ;)

Hopefully, after our move and company this weekend, my life will calm down a bit and I can get on a better schedule! I’ve decided that, while I really loved doing The Rose Cleanse last week, this is really NOT a good time for me to be cleansing. I’ve got a marathon in 4 weeks, and my workouts are proving to be a little TOO intense right now for just juicing until dinner. So, for now, I’m going to worry less about detoxing, and focus more on FUELING my workouts! I’m still going to be incorporating juice into my mornings, and eating plenty of raw foods, but I’m just not going to worry about following a certain “plan” at the moment. I’m always “the girl with a plan” when it comes to dieting, so this is going to be quite the experiment for me! We’ll see how it goes!
