Hi friends! Happy Wednesday!
Did all of you enjoy the second-to-last episode of LOST last night? I’m loving how it’s wrapping up so far– and I can’t wait until Sunday night for the finale!! Living in Los Angeles, we also have the unique opportunity to attend a special show– Dharma Station: UCB- A Lost Comedy Event on Saturday night! The husband and I wasted an hour and a half last night waiting for a “secret password” to show up on this website… only to find out that there was an error with the site, and the password wouldn’t be released until this morning! Ugh. Fortunately, we were on top of things this morning and managed to snag two tickets to the show! Wahoo!! I’ll let you LOST fans know how it goes.
Thanks to all that time-consuming password-hunting last night, we had a pretty late dinner. I was in the mood for something different, so I thought I’d try a new salad that I had seen on Kimberly’s blog: her Israeli-Inspired Chopped Salad.
I didn’t have all the ingredients the recipe called for, but I simply chopped up a zucchini, 2 tomatoes, and 3/4 of a cucumber and dressed it with lemon juice, salt and pepper. It was so refreshing and delicious! Even my husband enjoyed it!
I served the salad along with a small roasted butternut squash and a few of my husband’s roasted veggies:
That butternut squash is pure BLISS! And so easy to make! I simply chopped up the squash, tossed it in a bit of coconut oil, and spread it out on a baking sheet to roast for 30 minutes at 400 degrees. I tossed it half-way through the baking time, so that it would get evenly browned and crispy! Top it off with a little sea salt before serving, and it’s perfect! I’m telling you, make this ASAP!
Drool…. I might have to pick up another squash for tonight!
And no night is complete without dessert! Lately, I’ve been enjoying a mug of herbal peppermint tea and a couple squares of dark chocolate.
I ended up having a REALLY late night last night– we’ve been incredibly busy at work, and I stayed up until 3am finishing some illustrations! Needless to say, that made doing Insanity this morning nearly impossible. Especially since I could barely get out of bed! My calf muscles are SO sore!! Seriously, just walking is painful. My husband tried running this morning, and he thought his ankles were going to snap in half they were so stiff! Any other time, this would be fine– but we have a MARATHON to run in less than 3 weeks!
So… I’m afraid my 60-day Insanity challenge is going to have to be put on hold for the moment. It’s not worth ruining my marathon training, and my dvd’s will be waiting for me when the race is over! In the meantime, I might still do some of the Insanity workouts, because I really do enjoy the challenge, but I will not be doing them every day! Giving my muscles a day to recover is a must right now!
Since I had a slow-moving, early morning with work, breakfast was kinda bleak:
A handful of almonds, followed by another handful of almonds. Simple and satisfying!
When I got hungry mid-morning, I tried a new-to-me snack:
Goat milk yogurt! I’ve been kinda missing yogurt lately, and when I saw this stuff at Whole Foods the other day, I just had to try it! I love that the ingredient list is rather short, and it’s sweetened with pure maple syrup!
And the flavor was awesome! I’ve tried sheep’s milk yogurt before (and wasn’t a fan), so I was leery of trying the goat milk version– but this tasted just like I hoped it would!
I haven’t had cow’s milk yogurt in years, but I remember it tasting similar to this. I ate half of this cup as a snack, and saved the rest for an after-lunch dessert.
Lunch today was pretty standard for me:
What can I say? I’m a creature of habit. When I like something, I keep eating it until I get sick of it! I did add a few cucumbers this time, and it was such a great addition! When it gets warmer outside, I really gravitate towards more watery, crunchy veggies on my salads. Yum!
Alright, I’ve got to get on with the rest of my day! I’ve got a run in my future, and then a quick visit with my niece!

It’s probably a good idea you put off insanity so you can run your marathon. I can’t imagine you’d be able to train with sore sore legs!
