Happy Friday!!!
Sorry that I vanished on you this week– I’ve been totally SWAMPED with this move! Thank goodness we gave ourselves a full week of overlap between our two apartments, because it really has taken a long time to get everything cleaned and settled! I’d like to get as much of our security deposit back as possible from our old apartment, so I’ve been a cleaning machine the past few days! For being a one-bedroom apartment, there really is a LOT to clean!! I think this afternoon is going to be my last day working on the old place– so I can focus what’s left of my energy on our NEW place! I’ve already made two trips to IKEA to help decorate and organize our new place, and I think it’s coming along nicely… but it will be nice when I can dedicate my full attention to making our new apartment feel like “home.”
We’ve eaten too many meals out this week, but last night I finally got to break-in our new kitchen!
It’s weird getting used to a gas oven– I’ve had a gas stove top before, but seeing the oven heat up with a pilot light kinda freaked me out! It heated up FAST, though! I made one of our go-to dinners: Roasted Veggies and Quinoa.
Roasted broccoli and a sweet potato, along with quinoa and sauteed onion. My husband and I could eat this meal every night. Seriously.
Hopefully we’ll finish settling into our new apartment over the weekend, so I can get back on a regular schedule again! I ordered myself a little “reward” for finishing the move (sometimes I find the extra motivation I need by bribing myself
), and I really want to start using it on Monday! Check it out:
Insanity!! I have been dying to try this workout, and now that we’re saving so much money on rent, I finally bit the bullet and ordered it.
It looks tough, but I’m up for the challenge! I’ll be in good company, too– these ladies just started their 60-day challenge, too! I can’t wait to see our results!

Insanity is supposed to be tough! I’ve played around with the idea of getting it but I’m not sure if I would be able to keep up.. maybe in another month or so.
