Bloody Funny

Hi friends! Happy Hump Day! :D

Yesterday was a whirl-wind for me! Between picking up my dress, my colonic appointment (being stuck in traffic for over an hour afterward), and our evening at the theater, the day just FLEW by! Luckily I had some healthy fuel in my system to power me through:

Green red juice: Romaine, Kale, small apple, 1/2 beet, 1/2 lemon. This juice was just TOO sweet for me! I need to remember to cut back on the apple when I’m using a beet in my juice– there’s more sugar than you’d expect sometimes in raw beets!

I knew I should eat a lighter lunch before my late-afternoon colonic, so I opted for a green smoothie:

A simple blend of mixed greens, 1 cup almond milk,  1/2 cup frozen blueberries, 1 frozen nanner, juice of 1/2 lemon, and a dash of cinnamon. It was light and refreshing!

But I knew that smoothie alone wasn’t going to hold me over until 4pm… and I really wanted a TREAT!! I was actually drooling over Angela’s Healthy Blueberry Chocolate Glaze Cake the other day, so I used that as the inspiration for my new FAVORITE pudding:

Choco-cado Blueberry Chip Pudding!!!

I know avocados are REALLY, REALLY good for you– but I often struggle with texture of it! But when I had my frozen blueberries out for my smoothie yesterday afternoon, a light bulb went off. Why not add frozen blueberries to the avocado?? It totally changed the texture for me!

Holy moly, this stuff is to die for. I want to make a couple more tweaks to the recipe today, but I’ll share it with you tomorrow– I promise! :)

This stuff is so good, I almost forgot about the raw cheesecake pudding I had sitting in my freezer….

almost.

Dinner was a mad dash for us last night before the play, so I threw together a simple salad:

And then devoured a plate of raw cheesecake goodness:

(Cheesecake “deconstructed” as they’d call it on Top Chef!) ;)

Not a pretty plating job… but it was delish! I love the texture of the cheesecake pudding when it’s straight from the freezer– it’s solid, just like real cheesecake! And it simply melts in your mouth with each bite! I’m drooling just thinking about it… good thing I’ve got a little bit left for lunch today! ;)

The play we saw last night was AHHH-MAZING!!!! For those of you in the Los Angeles area, get your booties to the Mark Taper Forum and see The Lieutenant of Inishmore before the show closes in August! It’s truly one of the best plays I’ve ever seen. We walked into this play with high expectations– it was written by Academy Award-winning (In Bruges), Olivier Award-winning and Tony Award-nominated Martin McDonagh!

It also starred Chris Pine (who played Kirk in Star Trek):

All I can say is that this was the FUNNIEST, as well as the GORIEST, play I have ever seen! For those of you with weak stomachs– I’ll warn you now– there is QUITE a lot of blood on this stage!! But it’s done in a humorous way… if that makes sense. ;)   We felt our season tickets were worth just this play alone!

Since I was SO busy yesterday, I ended up taking the day off from exercise. There’s another Body Pump-ish class at my gym tonight (with the same instructor I enjoyed on Sunday!) so I think I’m going to hit it up for a good strength session! I love finding group exercise classes that I enjoy! :D   And I might squeeze in a run, if time permits. Otherwise, I’ve been really enjoying some quality time with my rebounder lately! I’ve been trying to bounce on it for 15-20 minutes a day, since it has similar benefits to running, without all the impact! Another bonus to rebounding– I can watch TV at home while I do it!

Okay, I’m off to get some more work done! Hope you’re all having a great day!!
