How was your weekend??
I had an EARLY flight yesterday– there’s nothing fun about waking up when it’s still dark outside!! But, it’s a good way to beat L.A. traffic…
Once I got through security, I picked up a bottle of water (and was so happy they offered non-refrigerated water!! I hate drinking ice-cold water… I think I have super-sensitive teeth.) and a couple magazines to keep me occupied. Before long, I was hungry, and snacked on the rest of my Pure2Raw bounty:
I was still a little hungry when I got on the plane, so I munched on a Cherry Pie Larabar as well:
Mmm… nothing like eating “pie” for breakfast!!
I managed to sleep for most of my flight, which was just what I needed after waking up so darn early! (there were also bunches of screaming kids on the flight, so sleeping was the best way to tune them out…)
When I arrived in Kansas City, I got to spend the rest of the day with my mom!! She’s such a good sport, and has volunteered to “eat like me” all week while I’m in town! Sounds fun, huh? On our way home from the airport, we stopped by Whole Foods to get some essentials, including a new-to-me stevia:
I’ve heard great things about NuNaturals brand, and was so excited to see that they carried it here! (they don’t offer it at my local store)
I quickly whipped up some of my Lemon Oregano Dressing, and threw together “Mommy and Me” salads:
My mom liked the dressing! Whew!
And of course… no day is complete for me without Choco-Cado Pudding!!
My mom was so excited to FINALLY try it!! I made a double-batch of the Cherry Chocolate Almond version, since it’s my current fave.
(sorry for the sub-par picture–> my uncle came over, and doesn’t know about the blog, so I had to be sneaky!!) In fact, my mom and I *grudgingly* shared some of our pudding with my uncle, and he LOVED IT!!! He’s actually slightly allergic to avocados, and after tasting it he said that this pudding was still worth eating! (even if his mouth was a bit tingly afterward…) Ha ha.
My mom agreed–> it was a TOTAL HIT!
For dinner, I wanted to make something simple that my mom would enjoy as well, so we opted for some wild-caught Alaskan salmon. I threw together a glaze of pure maple syrup, wheat-free tamari, and garlic:
I drizzled it over each salmon fillet:
Wrapped them up in tin foil, then baked them in a 400-degree oven for 20 minutes. Easy peas-y!
Served on a bed of mixed greens, with another drizzle of my Lemon Oregano dressing:
Very tasty! It’s been a LONG time since I’ve eaten fish (since I almost never cook it at my own house…) so this was a nice change for dinner!
However, I was left with a rather “fishy” taste in my mouth afterward, which I quickly cleansed with some Natural Calm:
It’s funny because I absolutely HATE the taste of “regular” Natural Calm, but the Raspberry Lemon flavor (sweetened with stevia) tastes like dessert to me!! I didn’t even need my usual dark chocolate last night… crazy!!
So far, so good with pleasing my mom. Hopefully she’ll enjoy the rest of the week’s eats, too!

Reader Feedback: Does your family eat similarly to you? If not, are they willing to try things you make? My mom has ALWAYS been opening to trying my “weird” food– even back when I was little and made “cheesecake” out of white bread, butter, Velveeta and white sugar! That’s love, people. Sorry you had to eat that, mom.
I’ve been slowly trying to get the rest of my family to convert to green smoothies, too!

My family is pretty open minded when it comes to food – though they live in a small town with limited ingredients- so they are pretty typical all-american eaters. They never turn down any dish I make though!
I am very lucky to come from a family of adventurous eaters! My dad even reads my blog and has made some of my recipes. He is a little skeptical about overnight oats, though.
My sister is also an avid blog-reader (though she doesn’t have her own) and often brings me ideas she has seen that I haven’t! And since she is a Nutrition major at school, and an athlete, she eats pretty much exactly like I do!

My mom refuses to try my weird food. Well, weird in her opinion anyway. I’m still trying to change her mind. One day…
My family doesn’t eat like me, but they do their best to make food that fits my lifestyle — usually I will cook for them or we will go out to eat to make it easier on all of us!

that salmon looks really good! i havent cooked fish in a while either but sometimes a nice simple piece is SO GOOD! have fun with your mom…so cute that she is eating like you…aren’t moms the best?!
